Lime in the coconut cocktail a perfect drink for summer nights on the patio
Lime In The Coconut
375 ml (1 1/2 cups) coconut milk
1 can (250 ml) frozen concentrate margarita mixers
250 ml (1 cup) white rum (optional)
1 l (4 cups) ice cubes
In a blender, combine coconut milk, margarita frozen concentrate and rum, if using; add ice cubes. Pulse until blended and frothy, about 1 minute.
Makes 4 servings.
