ACCOMPLISHMENTS: Nils Vik admits he used to hate coffee. Until he loved it.
Vik, who has a bachelor of environmental design from the University of Manitoba Faculty of Architecture, was a designer with EQ3 until an epiphany in a trendy Montreal neighbourhood. He "fell in love with long-pour espresso and steamed milk" at a coffee shop in Montreal during a trip in 2008. Coming up empty in his search for something similar in Winnipeg, he opened Parlour Coffee at 468 Main St., in September 2011. Coffee has turned into a "passion and downright obsession" he shares with his customers at his charming 200-square-foot caf© near the busiest corner in Winnipeg. Living a healthy lifestyle is another passion as Vik is active in weight training, cross-country skiing and cycling, which is his primary mode of transportation. "My father is Norwegian and there is an old saying that there is no such thing as bad weather, just bad clothing, which is why I cycle in sunshine, rain and snow," Vik said.
My favourite (gym) workout is a quick, 15-minute, low-weight, free-weight routine. In my old apartment building gym, I chose a training schedule from a poster and it became my routine. It includes squats, bench press, bent-over row, shoulder press, bicep curls, seated overhead tricep extension, standing calf raise and lunges. I also do sit-ups and push-ups. I really don't like using machines.
Favourite workout song?
I don't usually listen to music when I work out as I find it too distracting. Although, from time to time if I feel like running, I am partial to dance music such as Daft Punk, Toro y Moi, Erlend Oye.
I think active transportation is the number one thing you can do for your health and well-being. A 15-minute commute by car could actually be a 30-minute opportunity to ride a bicycle. Choosing to commute by bicycle helps relieve stress and ensures I stay active. Plus, it's often faster or more convenient than driving -- not to mention much easier to find free parking downtown! I think it's important to view fitness as preventative health care. Visual results aren't important in comparison to how you feel day to day.
What's in your fridge?
I always need the following in my fridge / cupboard: yogurt (one flavoured, one plain, never fat-free), granola, bread, cheese and bananas. My quick go-to is a Vega smoothie (vegan whole food protein powder, milk, banana).
What's your guilty pleasure?
I really love doughnuts.
