You can never have too much Vietnamese food, that’s pho sure.
Pho Linh Linh, the latest Vietnamese restaurant to open in the West End, held its grand opening on Sept. 28.
It was so packed that business partners Phuc Huynh and Lap Nguyen had to close on the following Sunday.
“We don’t have any more food,” laughed Huynh.
Located at 1060 Ellice Ave., the little building that used to be Chave d’Ouro now belongs to Huynh and Nguyen. Though it’s no longer a Portuguese restaurant, the partners are planning on keeping many things just the way they are.
“It’s already nice,” Nguyen said of the interior of the restaurant. “And it costs lots of money to renovate,” he added with a laugh.
Huynh and Nguyen — who is also the chef at Pho Linh Linh — said they changed the name and took over the business, but the tables, chairs, and paint job were and will remain unchanged.
The men were ready to open their restaurant a while ago, but they discovered the previous owners had installed a washroom without a permit.
“That’s why the city shut us down and we have to do everything all over again,” Nguyen said.
But after a final visit from the health department on Sept. 27, Pho Linh Linh was ready to open to the public the following day.
Adjacent to the nine tables in the main room is a doorway to an empty room, but the owners don’t know what they’re going to do with it yet.
Nguyen gained experience owning a restaurant when he lived in Vancouver. This is his first restaurant since moving to Winnipeg seven years ago.
Huynh got involved because he wanted something to do. His previous job was too demanding, so he quit. Then he helped to create Pho Linh Linh, which was named after Nguyen’s daughter.
Huynh’s daughter is involved in the restaurant too, as a server on the weekends.
