Craving a modern take on traditional pizza in South Osborne? Look no further than Vera Pizzeria. The new dine-in pizza joint opened on Dec. 8 with a warm oven and to warm reviews.
The space at 670 Osborne St., formerly home to All About Thai and previously Woo’s Café, has been transformed into a contemporary and open restaurant with the kitchen in close proximity to the dining room. 
“We serve Neapolitan or Naples-style pizza — Naples, Italy where pizza was born however many thousands of years ago,” owner Terik Cabildo, 27, said in the 20-seat dining room. 
The hand-stretched dough and ingredients for the pizza – which takes just 90 seconds to cook once it’s in the 537 C oven – are all prepared in-house, Cabildo said. The pizzas are priced between $11 and $16 with extra toppings of meat or veggies at $3 and $2 respectively. 
Vera’s menu features simple Italian ingredients such as Gaeta olives, spicy Calabrian salami, house fennel sausage, and pancetta. The dining room is also licensed and serves Italian wines, beers and sodas.

Currently, most of Cabildo’s ingredients are sourced from local Italian wholesaler De Luca’s, but as the business progresses he hopes to establish contacts with Manitoba producers and source basil and pork locally. He has also worked with Parlour Coffee owner Nils Vik to source local décor and building supplies, with the tables, benches and host stand coming from local craftsman Ben Borley.
Plans for Vera Pizzeria began in December of last year when Cabildo moved back to Winnipeg from Victoria, B.C.
Having completed his undergrad at the University of Manitoba, Cabildo left Winnipeg to study culinary arts in British Columbia. After graduating, Cabildo worked for Pizzeria Prima Strada in Victoria, B.C. where he grew attached to Neapolitan pizza.
 “I took what I learned from there and I brought it here. It was something I just ended up doing and I was fortunate enough to really enjoy it, and I wanted to do it myself,” Cabildo said. 
He was also inspired by his parents to take on the hospitality industry.
“My mom and dad had a restaurant in Neepawa for 23 years called Lee’s Village Restaurant doing Canadian-Chinese food,” Cabildo said. “They then moved to Morden and opened a restaurant called Kopper Kettle and they’re still operating today. So I took after them I guess.”
The name for Cabildo’s restaurant comes from the governing body of Neapolitan pizza, Vera Pizza Napoletana (VPN). And while Vera isn’t certified by the VPN (they don’t have a wood-fire oven), Cabildo is striving to achieve the best traditional Neapolitan pizza he can. 
“I want the product to speak for itself,” he said.
