Food Evolution to offer fine-dining experience at Kildonan Park

Almost six years after Partners Delicatessen closed, the Peguis Pavilion at Kildonan Park has a new restaurant.
Food Evolution, the latest restaurant from Winnipeg’s WOW! Hospitality Concepts, opened to the public on Thurs., June 5. The eatery features a café, sit-down dining and a bar, with a retro look and menu inspired by the community that surrounds it.
“The chefs, I give them credit, when I said ‘What are we going to work on?’ they said ‘OK, local, fresh, retro but with a modern twist,’” said Doug Stephen, president and CEO of WOW! Hospitality while at the Peguis Pavilion’s reopening celebration on June 4.
“We’re paying homage to north Winnipeg. You’ll see the dishes we have. The duck salad, the perogies are phenomenal and the smoked salmon, which is all made in-house. We’re not buying that from anybody.”
Vacant since November 2008, the Peguis Pavilion underwent $2 million worth of renovations by the city, including the installation of an elevator so park visitors can easily access the pavilion’s lower level and the duck pond behind the building. The duck pond is also undergoing renovation, with work to be completed sometime this fall.
Coun. Devi Sharma (Old Kildonan) said the renovated Peguis Pavilion and its Food Evolution tenant is a big boost to Kildonan Park.
“It’s a gem of north Winnipeg. It’s the second busiest park in the city,” Sharma said of the park.
“We have all these amenities in the park, the swimming pool, Rainbow Stage and golfing nearby. We have families coming in to enjoy picnics but the missing link was a restaurant, and a good one.”
While the addition of a licensed, sit-down restaurant in Kildonan Park was paramount, Stephen said it was important Food Evolution catered towards the casual park visitor, with the café offering soft ice cream, coffee and wood-fired pizza by the slice.
“I didn’t realize just how many people utilize this park for walking and for riding and for just being here. The chefs are working on picnic baskets that people can actually pick up here and take out and use,” Stephen said.
