Cooking around the campfire

I adore the challenge of making a satisfying meal while camping. The planning, the prepping, the cooler-Tetris, the campfire cooking.

We went on our first camping trip of the season last weekend. It was a big family affair at Stephenfield Provincial Park (an adorable campground west of Carman with some of the cleanest outhouses I’ve ever seen), and we ate very well, thanks to shared effort and planning.

The first night was easy: smokies and a pair of salads assembled in advance. Day two featured a lunchtime snack of brie and tomatoes drizzled with balsamic glaze and served baguette chunks fried in butter and garlic (both prepared on a campstove), followed by hot pizza subs for dinner.

My philosophy is to prep well so assembly is the only thing needed come mealtime. I also tend to pick dishes that require minimal cooking and few tools — many one-pot meals are transferable to the campground.

Some of our greatest hits include breakfast hash, shakshuka, vermicelli noodle bowls, tuna poke bowls and the aforementioned pizza subs (crusty buns, marinara, mozza and deli meats, toasted in tin foil over the fire).

I say “our” because much of my inspiration comes from camping with other food-oriented friends. One of my favourite hacks learned from a friend is to use Célébration cookies, specifically the caramel ones, for ‘smores. Regular old chocolate chip cookies also work in a pinch.

I’m a car camper and haven’t had the pleasure of experimenting with dehydrated meals for backcountry excursions, but I’m sure I’d enjoy the process.

Tasty tidbits

🇫🇷 Local chef Maia Nguyen will be at Patent 5 Distillery (108 Alexander Ave.) from 4 p.m. until late on July 10 and 11, serving up French-inspired fare for purchase, including riffs on steak frites, clafoutis (Google it) and more.

Nguyen will also be helping out chef Ben Kramer at Sustainable South Osborne Community Cooperative’s harvest dinner on Sunday, Aug. 17; tickets for that event are available here.

🍻 Neighbouring breweries Low Life Barrel House (398 Daly St. N) and Sookram’s Brewing Co. (479 Warsaw) are teaming up on Saturday, July 26, from noon to 6 p.m. for a day of collaboration.

Both breweries will feature food, music, hourly specials, games and a new collab brew to be launched that day. Getting back and forth between breweries will be a snap, with a trolley ferrying folks back and forth.

🧀 On Wednesday, July 16, the wine club at Bonnie Day (898 Westminster Ave.) will dive into vino made in British Columbia. Featured producers won’t be revealed before the event, which gets underway at 7:30 p.m., but the website notes the tasting will focus on “two small producers taking big risks and big creative leaps in order to stay alive in these uncertain times.”

Tickets for the event, which features four wines with cheeses paired by Cheesemongers Fromagerie, are $55 plus tax/fees.

🇮🇹 The food and wine of Italy’s Napoli region will be featured at an event taking place on Thursday, July 10 at Sharecuterie (160 Stafford St.).

The A Night in Napoli event, which runs from 8-10 p.m., will feature four premium Napoli wines curated by Loamanic Wines along with meats, cheeses and other seasonal fare. Tickets are $65 .

📺 Food Network Canada is looking for home chefs and talented dinner party hosts for a renewed spin-off of Come Dine With Me, a British reality cooking show. Interested Manitoban foodies can apply online, with filming set to take place between August and October.

Ben: We visited Gimli last weekend, which gave me a chance to visit my favourite store in the world, H.P. Tergesen & Sons.

We also grabbed some lunch at Beach Boy Restaurant — I opted for the pickerel and fries, which was fab. The fish was perfectly seasoned and only lightly coated, unlike some of the batter-heavy versions of fish and chips out there.

And after some walking and shopping, we stopped at Country Boy for some soft-serve ice cream.

Eva: I’m not a big natural wine connoisseur, nor do I drink many orange wines, but I recently tried (and enjoyed) No Es Pituko’s Orange Sauvignon Blanc. Available at local private wine stores, this Chilean vino is fresh, citrusy and only mildly funky. A real nice summer drink.
