Turkey Apple Meat Loaf

15 ml (1 tbsp) vegetable oil

1 medium onion, diced

2 cloves garlic, minced

2 medium apples (such as Empire, McIntosh, Cortland), peeled and diced

250 ml (1 cup) fresh breadcrumbs

50 ml (1/4 cup) chopped fresh parsley

1 kg (2 lb) ground turkey

1 egg, beaten

15 ml (1 tbsp) whole-grain mustard

10 ml (2 tsp) Worcestershire sauce

7 ml (1 1/2 tsp) salt

In a large non-stick skillet, heat oil over medium. Add onion; cook for 5 minutes, stirring occasionally. Stir in garlic and apples; cook for about 3 minutes or until apples are tender. Remove from heat. Stir in breadcrumbs and parsley.

In a large bowl, combine ground turkey, egg, mustard, Worcestershire and salt; stir in apple mixture until well combined.

Press turkey mixture lightly into a 22-by-12-cm (8 1/2-by-4 1/2-inch) loaf pan sprayed with cooking spray. Bake in a 180 C (350 F) oven for about 1 hour or until digital rapid-read thermometer registers 74 C (165 F).

Makes 6 servings.

Nutritional information per serving: 384 calories; 33 g protein; 17 g fat; 23 g carbohydrate; 2 g fibre.
