Winnipeg’s renowned pop-up frozen-fine-dining restaurant is heading north.

After a three-week stint in Winnipeg to be held later this month, which is already sold out, Raw: Almond founder Joe Kalturnyk confirmed Thursday the outdoor restaurant is heading to Churchill in early March for three days at the Fort Prince of Wales, a 250-year-old fort located on the shores of Hudson Bay Kalturnyk describes as a “magical location.”

A mutual friend mentioned the idea and put Kalturnyk in touch with Frontiers North Adventures, a company that operates tours in Churchill.

Having spent time in Churchill, Kalturnyk knew it was “an exciting place to be.”

“So I thought it would be a nice thing to help promote it to Winnipeg, because a lot of people around the world know about Churchill, but I don’t know if it is known as a destination for people in Winnipeg,” Kalturnyk said Thursday.

The restaurant will serve 20 guests per night. Ticket information and possible tour packages will be announced in the next three weeks.

Raw: Almond has been a staple of Winnipeg’s winter season since it debuted at the junction of the Red and Assiniboine rivers in 2013.

The brainchild of Kalturnyk of Raw: Gallery of Architecture & Design and Mandel Hitzer, the chef/owner at Deer + Almond in the Exchange District, the pop-up restaurant is world-renowned for its food and structural design.

As always, Kalturnyk said what’s going to be on the menu in Churchill is top secret.

As for the design, Kalturnyk envisions a structure with a transparent roof, allowing diners to stare into the northern sky as they dine, hopefully catching a glimpse of the northern lights.

The plan is to use locally sourced timber and dog sleds to help set a distinctly Churchill mood for the patrons.

“It is using materials that will be easy to work with up there and also something we can work with in -50 C with wind,” he said. “And it is a really good opportunity to see the northern lights because it is a clear part of the year.”
