Carne deshebrada, literally meaning "shredded beef," is a common offering at Mexican taco stands. It's made by braising a large cut of beef until ultra-tender and then shredding the meat and tossing it with a flavourful rojo sauce made with tomatoes and/or dried chiles.

Carne deshebrada, literally meaning “shredded beef,” is a common offering at Mexican taco stands. It’s made by braising a large cut of beef until ultra-tender and then shredding the meat and tossing it with a flavourful rojo sauce made with tomatoes and/or dried chiles.

Although short ribs are a bit nontraditional, their ultra-beefy flavour made them an excellent choice. To achieve flavourful browning, we raised the beef up out of the braising liquid by resting it on onion rounds; the ambient heat browned the short ribs just enough for this dish.

Next, we created a braising liquid that would infuse the beef with flavour and later act as a base for our rojo sauce. Beer and cider vinegar provided depth and brightness, and tomato paste boosted savory flavour. Smoky-sweet ancho chiles gave the sauce a rounder flavour and a gentle, spicy kick.

Cumin, cinnamon, cloves, oregano, and bay leaves added warmth and complexity. Once the beef had finished cooking, we pureed the braising liquid into a sauce with a smooth, luxurious consistency. A bright, tangy slaw provided a nice counterbalance to the rich meat. Use a full-bodied lager or ale such as Dos Equis or Sierra Nevada.

SHREDDED BEEF TACOS

Servings: 6-8

Start to finish: 3 1/2 hours

1 1/2 cups beer

4 dried ancho chiles, stemmed, seeded, and torn into 1/2 inch pieces (1 cup)

1/2 cup cider vinegar

2 tablespoons tomato paste

6 garlic cloves, lightly crushed and peeled

3 bay leaves

2 teaspoons ground cumin

2 teaspoons dried oregano

Salt and pepper

1/2 teaspoon ground cloves

1/2 teaspoon ground cinnamon

1 large onion, sliced into 1/2 inch-thick rounds

3 pounds boneless beef short ribs, trimmed and cut into 2 inch cubes

18 (6 inch) corn tortillas, warmed

1 recipe Cabbage-Carrot Slaw (recipe follows)

4 ounces queso fresco, crumbled (1 cup)

Lime wedges

Adjust oven rack to lower middle position and heat oven to 325 F. Combine beer, anchos, vinegar, tomato paste, garlic, bay leaves, cumin, oregano, 2 teaspoons salt, 1/2 teaspoon pepper, cloves, and cinnamon in Dutch oven. Arrange onion rounds in single layer on bottom of pot. Place beef on top of onion rounds in single layer. Cover and cook until meat is well browned and tender, 2 1/2 to 3 hours.

Using slotted spoon, transfer beef to large bowl, cover loosely with aluminum foil, and set aside. Strain liquid through fine-mesh strainer into 2 cup liquid measuring cup (do not wash pot). Discard onion rounds and bay leaves. Transfer remaining solids to blender. Let strained liquid settle for 5 minutes, then skim any fat from surface. Add water as needed to equal 1 cup. Pour liquid into blender with reserved solids and blend until smooth, about 2 minutes. Transfer sauce to now-empty pot.

Using 2 forks, shred beef into bite-size pieces. Bring sauce to simmer over medium heat. Add beef and stir to coat. Season with salt to taste. (Beef can be refrigerated for up to 2 days; gently reheat before serving.)

Spoon small amount of beef into each warm tortilla and serve, passing slaw, queso fresco, and lime wedges separately.

Cabbage-Carrot Slaw

Makes about 8 cups

1 cup cider vinegar

1/2 cup water

1 tablespoon sugar

1 1/2 teaspoons salt

1/2 head green cabbage, cored and sliced thin (6 cups)

1 onion, sliced thin

1 large carrot, peeled and shredded

1 jalapeno chile, stemmed, seeded, and minced

1 teaspoon dried oregano

1 cup chopped fresh cilantro

Whisk vinegar, water, sugar, and salt in large bowl until sugar is dissolved. Add cabbage, onion, carrot, jalapeño, and oregano and toss to combine. Cover and refrigerate for at least 1 hour or up to 24 hours. Drain slaw and stir in cilantro right before serving.

Jets’ brass warming up to El Nino?

Mike McIntyre 7 minute read Friday, Sep. 25, 2026

Decisions, decisions.

The Winnipeg Jets held their final dress rehearsal Friday night before the curtain rises next week on the new NHL season.

Unlike their first three exhibitions, this one in Denver featured competitive lineups that looked an awful lot like what we’ll see when the games start counting, with plenty of star power and veteran presence on both sides.

So what are we to make of the Jets’ 5-2 loss to the mighty Colorado Avalanche, who captured the Presidents’ Trophy last year and are once again a legitimate Stanley Cup contender?

Time for the PUB to review Winnipeg water rates

Editorial 4 minute read Yesterday at 2:01 AM CDT

We take you now to just over a month ago, to the Public Utilities Board and its decision about water and sewer rates for Russell, Binscarth, Angusville, Rossburn and Gambler First Nation.

Why? Just wait.

The area is supplied with water and sewage services by the Russell-Binscarth Water and Wastewater Utility, which has a total of 1,014 customers.

As the PUB noted in an Aug. 27, 2026 order on the utility’s rates, “The [water treatment plant] gets water from two groundwater wells that were upgraded in 2016 and the raw water main was installed in 1984. The water distribution system is primarily cast iron pipe. The raw water line will need to be upgraded in the near future to keep up with demand.”

‘Scared to Snitch’ could take subtler approach

Maureen Scurfield 3 minute read Yesterday at 2:01 AM CDT

DEAR MISS LONELYHEARTS: I just read the letter from “Scared to Snitch” and have some comments. The mother-in-law who gambles is an adult with a decent income. Nowhere does the letter say her gambling is causing her problems.

If that is the way she wants to spend her time, using her money, and it’s not impacting her life, what about letting it be? She’s an adult making her own decisions.

Options? Have a conversation with her, and ask, “Why those tears at the thought of others knowing?” That may be an opening to explore things more deeply. Why is she fearful?

I’m speaking from experience, having had a loved one deep into the addiction, which caused obvious and big consequences.

Blue Bombers whiff on their opportunities to put game away

Taylor Allen 6 minute read Friday, Sep. 25, 2026

In theory, Bryce Perkins has a simple job.

When it’s third and short, the Winnipeg Blue Bombers trot out the short-yardage quarterback, and all he has to do is plunge forward for a yard or two to make everyone on his sideline happy.

But on Friday night against the visiting Toronto Argonauts, he went above and beyond his job description.

The Bombers, down 24-21 with six minutes left, faced a third-and-one from their own end when Perkins found a hole and burst through it for a 76-yard touchdown to put the home team in front 28-24 late.

Tenants slam Alta.-based landlord, protest rent increases

Scott Billeck 6 minute read Friday, Sep. 25, 2026

Charlie Medd wasn’t ready for another adventure last October, when she moved out of the Wolseley Avenue apartment she had called home for 15 years.

Medd said life at Lincoln Apartments began to change after Wingspan Properties, an Alberta-based landlord, bought the building, made minor cosmetic changes and increased rent. She felt the changes were intended to push renters — many of them on fixed incomes — out the door.

“At some point, I got scared. I’d been there 15 years,” Medd said about the threat of rent increases. “I’d just painted my whole apartment. But when I heard that there’s going to be that many people homeless, I thought, ‘I’m too old for another adventure.’

“It felt like you were getting a nudge out the door. Like, ‘Yeah, we’re going to be doing this, and your rent is going to go up every year.’”
