It was only the end of May, but Tiffany Grenkow was already harvesting arugula, lovage, horseradish leaves and pea shoots at the Sustainable South Osborne Community Co-operative gardens. Many of the plants were sown in late fall.

Lovage, a native plant, was introduced a couple of years ago and is now a perennial staple, while mountain spinach, a hardy South American variety, is new to the gardens.

On a chilly Monday morning earlier this week, young tomatoes were sheltered in cans against the wind, while onions, peas, lettuce and more were sprouting alongside Marigold, which were planted to ward off pests.

Meanwhile, 140 new fruit trees are blossoming along an area of the Churchill Drive dike that concrete chunks once littered.
